Chef Hanis Cavin is leaving Kensington Grill to open his own restaurant with partner and fiance Sara Stroud. His last official date at Ken Grill is July 17, and he expects (hopes) his new place, located at 2632 University Avenue, will be open by the end of July. It's called Carnitas's Snack Shack, named for Cavin's pet pig, Carnitas. Here's a picture of the man with his beloved pet, a miniature pot-bellied pig:
A twitter account will be set up, on which Carnitas the pig will be tweeting about his visits to "his" restaurant. He already has a Facebook account, under the name Carnitas Speck. "One thing we're going to try, though it may or may not work," says Cavin, "is to go to the Farmers Market daily. I've been running giant restaurants for so long, I've got to keep myself occupied. Every night at 6 o'clock, I'm going to be preparing what I bought at the Farmers Market, could be fresh fish, or chicken from the chicken guy, whatever, and create a special out of it every day." The new place will also be open late night, till midnight. In the artist's rendering, the restaurant will seat up to 40, and Cavin plans to keep the menu items between $5 and $15.
Regarding his separation from Kensington Grill, Cavin says, "I want to achieve success on my own. Tracy [Borkum, owner of Kensington Grill] is excited for me and sad at the same time. It's been hard on both of us, but we've been doing business as normal and not talking about it. This is the first job I'm leaving that I don't want to."
Replacing Cavin will be JC Colon, the current sous chef at Borkum's other restaurant, Cucina Urbana.
