Five-Course Countdown New Year's Eve Dinner
Monday, December 31; seatings at 6 and 9 p.m. The New Year's celebratory feast at KITCHEN 1540 will be five courses that may be paired with wines. The fun, reversed dinner courses blast-off with course FIVE and countdown from there until ONE, which is, of course, dessert. FIVE starts with oysters, prosecco mignonette, and the additional suggested pairing is 2016 Hubert Brochard, Sauvignon Blanc, Sancerre, France. FOUR offers choices, including Beef Tartare, Salmon Crudo, Bruschetta or Farm Truck Salad, and the additional pairing is 2017 Von Buhl "Bone Dry" Riesling, Pfalz, Germany. The selections for THREE are Cauliflower Soup with seared scallops and American caviar, Squid Ink Fettuccini with crab and uni, or Risotto with butter poached lobster tail. The suggested wine is 2015 Haden Fig, Chardonnay, Willamette Valley. For TWO course, guests choose from Beef Tenderloin, King Salmon, Liberty Duck Breast or Butternut Squash Gnocchi - all served with elegant accompaniments and a recommended pairing of 2015 Stoller "Reserve," Pinot Noir, Dundee Hills. This lovely delicious dinner ends with course ONE, which is either a Giant Chocolate Macaron served with vanilla crème patisserie, raspberry coulis and fresh raspberries; Chai Crème Brûlée with dark chocolate mousse quenelle and orange bourbon shortbread cookie; or Strawberry and Champagne Trio of champagne sponge cake, strawberry buttercream, strawberry and pink champagne sorbet, with a tasting of brut Champagne. Decadent desserts can be accompanied by Moet Chandon Imperial Brut, Champagne, France. $125 per person, $40 additional per person with three wine pairings, $65 for five wine pairings; exclusive of tax and gratuity.
