A Very Merry Gourmet Christmas Dinner
Chef Nathan Lingle will be serving an elegant and inventive Three-Course Christmas Dinner at L’Auberge Del Mar’s signature restaurant KITCHEN 1540. The festive meal starts with a choice of Winter Chicories with wheat berries and pears, Tuscan White Bean Soup, Red Snapper Crudo or Mussels in a smoked tomato broth. Then family and friends can enjoy a winter warming entrée that includes a selection of either Short Rib Genovese accompanied with potato puree, kale, and black trumpet mushrooms; Butternut Squash Gnocchi with sage and chestnuts; Salmon served with couscous, chermoula, pomegranates and minted yogurt; or Seared Scallops with quinoa apple salad and sweet potato puree. The luscious desserts to end this memorable dinner present a choice of Pine Nut Tart with mascarpone gelato, Dark Chocolate Pecan with bourbon vanilla gelatoor Vanilla Swiss Roll Cake with peppermint mousse. The special Three-Course Children’s Menu offers starter selections of Caesar Salad, Mixed Fruit Cup or Veggies with ranch dip. The entrees are New York Strip with mashed potatoes and roasted carrots, Pasta with cheese or tomato sauce or Chicken Fingers with French Fries. The younger set choice for dessert is Holiday Oreo Cookie Pops or Chocolate Chip Cookie with ice cream.
Three-course dinner is $89 per adult; $25 children’s three-course dinner (12 and under); exclusive of tax and gratuity.
