Yesterday’s post was all about a high profile restaurant (The Lion’s Share) losing its head chef. Today’s is the opposite. Another popular eatery in need of a strong captain, Prepkitchen Del Mar (1201 Camino Del Mar), has found their new executive chef.
Whisknladle Hospitality (WNLH) recently hired Mark Bolton, a journeyman whose former ports of call include Pacifica Del Mar and downtown’s soon-to-be-razed The Fleetwood (which will soon be reborn as south-of-the-border lounge Los Banditos under Good Time Design). Being that the restaurant he’ll helm is currently closed, Bolton is working with his new colleagues to develop a game plan to maximize the re-open success of the coastal haven for home-style goodness and some of the county’s best take-out.
Early this year, Prepkitchen Del Mar became the first restaurant to fall victim to chef and restaurateur Brian Malarkey, who has made a practice of seeking out young, talented local chefs, and hiring them away to helm his Enlightened Hospitality Group venues. Malarkey secured the services of former Prepkitchen Del Mar chef Ryan Studebaker (a 2011 Gayot Top Rising Chef) to run his carnivore diner, Gingham, in La Mesa.
Bolton inherits a restaurant with a solid reputation in a neighborhood filled with citizens who reward consistency with repeat business. Having worked in Del Mar twice in the past, Bolton is familiar with that clientele. In an effort to best serve them in this new capacity, he is currently training at Prepkitchen Little Italy as well as WNLH flagship Whisknladle in downtown La Jolla. Prekitchen Del Mar projects September 6 as their re-open date.
