The Missing Point in Del Mar's Chef Triangle

Last month, I reported that the former chef at Pacifica Del Mar, Evan Cruz, pulled up stakes and bid adieu to that resto. It worked out for them -- they were able to hire a former kitchen aid to come in and take the reins. Having since enjoyed his cooking, it's safe to say PDM will be alright as long as his kitchen can execute his vision in the midst of typically busy dinner services.

Last week, Naomi Wise chimed in with the news that long-time L'Auberge Del Mar executive chef Paul McCabe announced his upcoming departure from the resort. This came as a surprise to San Diego chef watchers, considering the huge overhaul of the menu and installation of a McCabe-championed vertical garden in the cabana-graced outdoor dining area of the resort's gourmet enclave, KITCHEN 1540. His last day before reporting to work at Delicias in Rancho Santa Fe will be November 12.

There's no word on who will fill McCabe's shoes, but it would seem this turbulent chapter in the story of Del Mar's most gourmet-saturated block (which includes Jason Maitland's departure from Flavor Del Mar) is coming to a close. By the time this info hit the street — Camino del Mar, that is — I had just completed my own investigative journalism and found out that chef Cruz's reason for leaving PDM was so he could walk across the street and accept a job offer from L'Auberge to be their new sous chef.
